For the Patties:

  • 1 lb ground beef (85% lean)
  • 1/4 cup breadcrumbs
  • 1/4 cup milk
  • 1 small onion, finely chopped
  • 1 large egg
  • 1 tablespoon Worcestershire sauce (check for no alcohol)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  • Salt and pepper, to taste

For the Gravy:

  • 2 tablespoons unsalted butter
  • 1 medium onion, sliced
  • 1 cup beef broth (low-sodium)
  • 2 tablespoons all-purpose flour
  • 1 teaspoon soy sauce
  • Salt and pepper, to taste

Instructions

Prepare the Patties:

  1. Mix the Patty Ingredients: In a large bowl, combine the ground beef, breadcrumbs, milk, chopped onion, egg, Worcestershire sauce, garlic powder, onion powder, thyme, salt, and pepper. Mix everything together until well combined, but avoid overmixing to keep the patties tender.
  2. Form the Patties: Shape the mixture into 4 oval-shaped patties. Make sure they are uniform in size for even cooking.
  3. Cook the Patties: Heat a large skillet over medium heat and add a small amount of oil. Once hot, add the patties and cook for about 4-5 minutes per side, or until they are browned and cooked through (internal temperature should reach 160°F). Remove the patties from the skillet and set aside.

Make the Gravy:

  1. Sauté the Onions: In the same skillet, melt the butter over medium heat. Add the sliced onion and cook for about 3-4 minutes until the onions are softened and slightly caramelized.
  2. Make the Roux: Sprinkle the flour over the onions and cook, stirring constantly, for 1 minute to create a roux.
  3. Add the Beef Broth & Soy Sauce: Gradually pour in the beef broth, whisking constantly to avoid lumps. Stir in the soy sauce and bring the mixture to a simmer. Cook for 3-5 minutes until the gravy has thickened to your desired consistency.
  4. Season the Gravy: Taste the gravy and adjust with salt and pepper as needed. If the gravy becomes too thick, add a little more beef broth to reach the right consistency.

Combine the Patties and Gravy:

  1. Return the Patties to the Skillet: Place the cooked patties back into the skillet with the gravy, spooning some gravy over the top. Let the patties simmer in the gravy for an additional 5-7 minutes, ensuring they are fully heated through and coated in the flavorful sauce.

Serve:

  1. Serve and Enjoy: Serve the Salisbury steaks hot, spooning extra gravy over the top. Pair with mashed potatoes, rice, or steamed vegetables for a complete meal.
